The Tuminds team are big fans of cakes, baking and all things food. So it is inevitable that Pancake Day is an important day in our diary. After a great Tuesday brunch shared with our lovely neighbours, Dynam, we thought we will share our not-so-bad-for-you oatmeal pancakes recipe with you to celebrate this indulgently satisfying day.
Not-so-bad-for-you Oatmeal Pancakes (makes 6)
Ingredients:
- 1/2 cup of rolled oats
- 1/4 cup of all-purpose flour
- 1/4 cup of whole meal flour
- 1 tsp of baking powder
- 1 tsp of baking soda
- 1 tbsp of caster sugar
- 1/4 of tsp of salt
- 1 cup of milk
- 1 egg
- 1 tsbp of vanilla extract
- 1 tbsp of butter, melted
- butter for frying
Method:
- In a large bowl, mix the dry ingredients: oats, all-purpose flour, whole meal flour, baking powder, baking soda, caster sugar and salt
- Add the milk and egg to the same bowl and whisk until combined
- Stir in the vanilla extract and cooled melted butter
- For best results, let the batter sit for 15-30 mins
- Heat your griddle on medium and brush some butter on the surface before scoping the batter on with a ladle
- Wait until the top of the pancake begins to bubble, then turn it over and cook until both sides are golden brown
- Repeat until all the batter is used up. You can keep the pancakes warm in a low oven, but make sure your oven’s temperature is very low to avoid the pancakes from over cooking.
Enjoy with nutella and banana slices!
